Why do I keep seeing the word betrayal attributed to Lamb’s actions in this scene?

Standish was laboring under seriously misguided assumptions about her former boss and about MI5 in general. Lamb had tolerated that, probably deciding (up until that point) that there was no real upside in sharing the truth.

But that changes when she begins moralizing about her old boss and how good things used to be and her misapprehensions begin metastasizing in other directions.

So he drops the truth bomb on her, laying out in stark terms how her own flaws enabled a traitor at the highest levels of the service.

Is it direct and a harsh truth? Yes. Betrayal? No.
